As a pasta lover, occasionally I have one or two jars of homemade basil pesto. It’s a plus when you need to prepare something for dinner and you’re limited on time.
Here is a recipe for delightful Basil Pesto Chicken that needs only 30 mins to prepare.
- 400gr boneless skinless chicken breasts
- 100gr basil pesto
- 80gr parmesan cheese, grated
- 50ml milk
- 50gr butter
- 2-3 garlic cloves, minced
- 1/2 cup mushrooms, sliced
- a handful of fresh basil leaves
Grease a grill pan and cook the chicken breasts until golden. Transfer to a plate and cover to keep them warm.
Warm the butter and milk, add parmesan cheese and stir until melted and mixed well.
Add the mushrooms, garlic and pesto (and salt if needed). Cook for 5 more mins and remove from stovetop.
Add the grilled chicken breasts.
Garnish with basil leaves, sprinkle additional parmesan cheese and serve.
