These are my favorite energy bites when I need energy boost during busy work days.
All you need is:
- 1/2 cup almonds
- 1/2 cup hazelnuts
- 3-4 medjool dates
- 1/4 cup unsweetened coconut flakes
- 1/4 cup fine oats
- 2 tsp matcha powder
- 1 tbs honey or maple syrup
- 1 tbs coconut oil
- 1 tsp cinnamon
- 1/4 cup pistachios, chopped (for rolling)
Start with soaking the almonds and hazelnuts in water for 8-12 hours.
The medjool dates should be also soaked in water for just few minutes until they’re soft enough to puree. The soaking water could be later used in smoothies 🙂
Combine all ingredients into food processor and process for couple minutes until finely chopped and blended.
Roll the mixture into small evenly sized balls. Then roll each into the chopped pistachios.
Enjoy immediately or store in the fridge for 3-5 days in an airtight container.
This is one of my favorite kind of breakfast, as it always takes me back to my childhood when my grandma used to cook it for me during the summer vacations.
It’s super easy to make and all you need is:
- 200gr yogurt
- 150-200gr flour (depends on how big the eggs are)
- 3 eggs
- 1/2 tsp baking soda
- 1/4 tsp vanilla extract
- confectioner’s sugar for dusting
- your favorite kind of jam
Whisk the eggs and add the flour and vanilla extract.
Add the baking soda to yogurt, mix and leave it to rest for few seconds. Then add it to the egg mixture and stir until well blended.
Using a table spoon, scoop small amount of batter and pan-fry for few seconds each side. The oil must be hot enough or the batter won’t puff correctly and if the oil is too hot, it can easily burn.
Serve warm, dusted with confectioner’s sugar on top and your favorite jam.

A strive for healthy and nutritious food, this easy to make coconut granola is one of my favorite morning treats.
Here comes the recipe.
In bowl mix:
- 2 cups fine oats
- 1 cup unsweetened coconut flakes
- 1/3 cup dates, finely chopped
- 1/4 cup goji berries, finely chopped
- 1/3 cup almonds, finely chopped
- 3 tsp chia seeds
- 1/2 tsp cinnamon
In a saucepan, heat on stovetop:
- 1/3 cup coconut oil
- 1/3cup honey
- 1/4 cup maple syrup
Stir the coconut oil, honey and maple syrup until they melt and mix well.
Mix it with the bowl of dry ingredients and leave it to rest for about 15mins.
Put the mixture in a flat pan covered with parchment paper and bake for 25min at 180* C (356* F).
Allow it to cool and put it in the fridge for couple of hours before cutting into bars. Or simply stir and store in a big jar in the refrigerator.
You can prepare your workdays breakfast in just few minutes with couple of spoons granola, yogurt and fresh fruits.
There’s nothing better than warm and soft pancakes in the morning!
Here is a recipe for Bulgarian pancakes.
- 250gr flour
- 500ml milk
- 3 large eggs (4 small ones)
- 20gr melted butter
- 2-3 spoons of sunflower oil
- a pinch of salt
Yield: about 10 pancakes (22cm pan)
Using a mixer whisk the eggs. Add the milk, flour and whisk until well blended.
Add melted butted, cooking oil and salt then stir.
Heat a fry pan and pour small amount of batter, tilting the pan to move the mixture around for a thin and even layer.
Cook until undersides are golden brown, then flip with a spatula.
Repeat with the remaining batter. Add more butter to the skillet if needed.
Serve warm with cheese or jam, or why not both! 🙂
